  1. 4 cups fresh toor Dana (chickpea seeds)
  2. 1 medium to big boiled, peeled and mashed potato
  3. 3 tbsp green chillies paste (depends on how spiciness of chilli)
  4. 2 tbsp crushed garlic
  5. 1 tbsp crushed ginger
  6. as per taste Salt
  7. 1 tbsp garam masala
  8. 1 tbsp sugar
  9. 1 tbsp coriander cumin powder
  10. 3 tbsp chopped cashew nuts
  11. 2 tbsp sultanas
  12. 2-3 tbsp grated coconut
  13. 2-3 tbsp chopped coriander leaves
  14. 1-2 tsp lemon juice
  15. 1 tbsp sesame seeds
  16. 1 boiled peeled and mashed potato
  17. 4 tbsp oil
  18. as per taste Red chilli powder if required
  19. For layer
  20. 1 cup maida/all-purpose flour
  21. 1/2 cup wheat flour
  22. 2 tbsp oil
  23. 1/2 tsp lemon juice
  24. 1 tsp powdered sugar
  25. 3/4 tsp salt
  26. Frying
  27. as needed Oil

Instructions to make to make Lilva ni kachori

  1. Combine ingredients for layer in a bow, mix them really well and make semi hard dough like for puris. Cover and keep aside.
  2. Prepare ingredients. Wash and dry chick peas on a towel for 10-15 minutes - very important step. Grate them in a chilli cutter.
  3. Heat 4 tbsp oil in a pan. Add ginger-garlic-green chillies paste. Fry for a minute or two and then add sesame seeds and dry fruits.
  4. Fry till sultanas puff. Add grated chickpeas. Combine well. Roast them on medium to low heat till they turn from light green to dark. You will also notice that a bit of moisture from peas is evaporated and it looks a bit dry. You need to stir very frequently to avoid scorching and to ensure even roasting.
  5. Add all the powdered spices, salt, sugar and mashed potato at this point (my mashed potato look red because I used the leftover from morning breakfast). Combine well. Add coconut, chopped coriander leaves and lemon juice at last. Combine and remove from flame.
  6. Let it cool.
  7. Pinch out a small lemon size dough. Make it smooth, flat and roll a Puri. Place 2 tbsp more/less (depending on the size of Puri) on it. Put the edges together and pinch out extra dough very gently. Spread the lump of dough from the centre and pinch to seal.
  8. Fry balls on medium to low heat till they are light brown and crispy. Serve hot with sweet chutney, coriendar chutney and sauce. It also goes very well with tea.
