1. Butter and flour your pan. Preheat oven to 200°C
2. Sift flour, baking soda, caster sugar. Add regular sugar whisk and set aside
3. In a bowl add butter, egg whites, milk, yogurt, strawberry essence and whisk
4. Whisk wet ingredients into flour mixture until just combined. Pour into prepared tin and bake for 50mins or until a toothpick inserted into the center comes out clean
5. Leave cake to cool in the pan for 10mins. Remove and leave to cool completely
6. To decorate, slice the cake into two eqaul halves if you baked in one pan
7. Put a dollop of whip cream on your board, take the top half and place it bottom down on the cake board. Add a layer of whipped cream then some strawberry jam. Add some strawberries that are halved
8. Add the other half bottom up. In the centre add more whipped cream, spread slightly then add whole strawberries. Put icing sugar in a sieve and dust lightly on top of the strawberries. Chill for a bit or you can serve immediately. Enjoy
